Kale Soup with Beans & Bacon

A combo of Red Russion and curly kale.
The weather may be stormy and gray, but this morning we had the good fortune of harvesting kale at a nearby garden project.  Tonight we feast on a hearty meal of kale soup and homemade biscuits. 

This was an easy soup to throw together thanks to a few thick slices of bacon in the fridge and the stock we reduced yesterday. 

The quantities in this recipe are all dependent on your tastes and available ingredients. 
  1. Saute one chopped onion and raw bacon pieces in a soup pot until bacon is cooked and onions are translucent. 
  2. Add fresh kale, washed and chopped into bite-sized pieces. (Scissors work well.)
  3. Add stock, whey or other cooking liquid of choice. (Water is fine.)
  4. Add minced garlic.  Tabasco or chopped chili peppers adds a nice element of heat and helps to round out the flavor. 
  5. Add a can of white beans.  (or soak and cook raw ones)
  6. Add additional liquid if needed. Salt and pepper to taste.
Heat and eat. Simple and filling, just as winter soups should be.
