This was an easy soup to throw together thanks to a few thick slices of bacon in the fridge and the stock we reduced yesterday.
The quantities in this recipe are all dependent on your tastes and available ingredients.
- Saute one chopped onion and raw bacon pieces in a soup pot until bacon is cooked and onions are translucent.
- Add fresh kale, washed and chopped into bite-sized pieces. (Scissors work well.)
- Add stock, whey or other cooking liquid of choice. (Water is fine.)
- Add minced garlic. Tabasco or chopped chili peppers adds a nice element of heat and helps to round out the flavor.
- Add a can of white beans. (or soak and cook raw ones)
- Add additional liquid if needed. Salt and pepper to taste.
Heat and eat. Simple and filling, just as winter soups should be.
